It's a USB headset with headphones and a microphone? It doesn't surprise me that "Stereo Mix" is not available - people using a headset would not normally want to have their own voice echoing through the headphones while they try to make a phone call. If you click on the little black arrow...

How are you recording? A microphone? How are you monitoring? Headphones? How much "spill over" are you getting from one track to the other?

I think you may need to invest in a little mixing desk and 2 or 3 microphones, then you would be able to position the microphones and set appropriate levels for each "sound source".

In Audacity 1.3.11 (recommended), click on the name of the track, and from the drop down menu select "Split to Mono".*
You can now adjust the (mono) tracks independently.

In the Windows Control Panel, set the default recording source to "Line In" or "Mic in" (depending on which you are using) instead of "Stereo Mix".

You can't reach over and turn the recorded volume down, although the Marantz is better at that than the Zoom.
