What happens if you launch Audacity, then "File menu > Open" and select the project file?

You may need to do a bit more to trigger the compaction.
Again with the copied project, try reversing a long'ish track, then reverse it again so that it's the right way round, then Save the project and exit.

That explains it. I thought that they would include Rosetta 2 by default, but apparently not. The new M1 Macs can't run programs that have not been compiled specifically for the M1 chip unless Rosetta 2 is installed.
