The vertical grid lines are just a visual aid for the (logarithmic) frequency scale.
You can turn off the grid lines if you find that easier (there's a tick box in the Plot Spectrum window).

I've just tried using HDMI on my Linux laptop. The only problem that I had was finding the right device number to connect Jack to. This is the setting that worked for me (using QJackCtl)

I don't know the exact settings to use. I just fiddled around with those effects to try and get close to original example. The best settings will depend on what your voice is like naturally.

Audacity does not support the CART chunk.
(It seems that very few audio editors other than Adobe Audition do)

Are those other programs using Jack?

If you start Jack with QJackCtl, you can see which applications are attached to the Jack audio streams in the "Connect" dialog.
