In Audacity 1.3.12 If there are gaps between the sentences you can use "Analyze menu > Sound Finder" to mark the sections with labels. If there are not gaps, then you would need to do that part manually. Then use "File menu > Export Multiple" to export the labelled sections as in...

Try upgrading to Audacity 1.3.12
Then go to "Edit Menu > Preferences > Devices" and select the recording device that you want to use. For fregodoy that will be the USB option.

You're quite correct - there is no menu option for "Mix to New Track" - I don't know why - I presume that the developers though that it was needed for most users, and as it is available through the keyboard then that would be sufficient for more "advanced" users. keybindings.png ...
