When using MP3 export with Chains, the settings that were used last will be used. So if you want to export a load of files at say the "Preset Extreme" setting, Export a short dummy file at that setting before running the chain. This is a bit of a pain if you regularly change your MP3 setti...

I usually use Normalize as it retains my preferred setting (Amplify always defaults to 0dB in Audacity 1.3.12 but I usually prefer to keep a bit of headroom before exporting, so generally Normalize to around -0.1 dB).
