Audacity currently only supports a maximum of 2 channels for playback (stereo), though you can export multi-channel audio files if you have some means of playing them.
What sort of M-Audio Mixer do you have (model number?) and how is it connected to the computer?

It may be too late to rescue your current projects. While a project is open, you can undo actions by pressing Ctrl+Z (or select "Undo" from the Edit menu) This article may give some clues as to what went wrong in the other project, or at least help you to avoid the problem from re-occuring...

But what can be done with signal drops ? You mean when chunks of data are missing? (drop-outs) There are some techniques for concealing very small amounts of data loss (packet loss concealment), but if the lost data is much more than loosing the occasional few bytes there's not much that can be don...
