If the track in Audacity is a single mono track and you export it as an MP3, it will automatically become a mono MP3 file. The "Stereo/Joint Stereo" options make no difference.

For Audacity 1.3.12, look at the bottom of the "Transport" menu and select "Overdub".

I've never used Win 7. I believe it should work, but best to check with the manufacturer.
It should also work with Skype but you will probably need to change the sound set-up in Skype. (I've used a similar device with Skype on Linux and it worked fine).

You may be in "Pause" mode.
Most of the menu items are unavailable while playing, recording or paused - you need to be in "Stop" mode.

Before you go on to doing normal editing, remember to switch the "Dither" setting back on for "High Quality Conversion" in Preferences. Recommended dither settings are "Triangle" or "Shaped". Recommended dither settings for "Real Time Conversions" is...

I don't need it to be 12-bit, all I need is the sound, These instructions are for Audacity 1.3.12. If you're using an earlier version I'd highly recommend upgrading to 1.3.12. To get the same effect at 12 bit, go to "Edit menu > Preferences > Quality" and set "High Quality Conversion...

In Audacity 1.3.x there is no pattern (as far as I'm aware) other than the creation time.

Topics Merged. One thing that you have on your side is that Audacity 1.2 numbers the .au files in series, so the lowest number is the first bit and the highest number is the last. Scratch that. In Audacity 1.3.x the .AU files are numbered randomly, so you will have to rely on the file creation time.
