This does not make sense.

You can record multiple tracks if they are vocal, but not if they are guitar?
How about if you start recording your voice, then throw in a couple of notes on your guitar?

What is different between recording guitar tracks and recording vocal tracks?
Are you using the same microphone for both guitar and vocals?

Or the sound card driver. I've seen some very strange things happen if recording is attempted at a sample rate that is not supported by the driver.

Try setting the recording sample rate to 44100 Hz (in both the Windows Control Panel and in Audacity "Preferences > Quality")
