On Audacity 1.2 recording will always start a new track. Upgrade to Audacity 1.3.12 and you can use Shift+R (Append Record) which will continue the recording on the end of the current track or from the playback cursor position if that is further to the right. Currently you can't. Audacity does not yet support multi-channel playback.

Working with audio (or video) uses a lot of disk space and running out of disk space is nearly always fatal to the project.
Free up as much disk space as possible, then defragment your hard drive. Windows should have a minimum of 10% free disk space at all times.
