I'm surprised that Audacity is crashing a lot - are you certain that you are using Audacity 1.3.12 (look in Help menu > About Audacity). It sounds like you may have a feedback loop through your mixer.
Check carefully the path that is being taken through the mixer and ensure that the computer output is not being routed back into the computer input.

MP3 files are a lot smaller than WAV files - that makes them good for MP3 players, or sending by e-mail.
