Some of the tutorials may be worth a look. Also, the Windows version of Audacity 1.3.12 includes the full user manual in the Help menu.

Which settings do you use to remove the noise? I made a guess as to which voice sample you used, then made a noise sample from that, discarding (deleting) the voice. There is only one version of Audacity and it supports multiple languages. It should default to the system language of the computer. Do you have a Chinese version of Windows?
