As for the record level, I'm using a Sony PCM D50 recorder and following the instructions of recording at about -12db. My guess is that the first file (test1.mp3) has been recorded from the laptop microphone and not from "Stereo Mix".

Normalizing adjusts the level so that the highest peak will be at the target level - in the case of your example that will be -10 dB. If you think that you may upgrade your microphone(s) later, it may be worth getting a small mixing desk that has "phantom power" available. Many recording microphones require phantom power, so although a mixing desk with phantom will cost a bit extra now, it could save you needing to upgra...
