Tag support in Audacity is pretty rudimentary. You would probably do better to disable "Show Metadata Editor Prior to Export" (In Audacity 1.3.12 this is in "Edit menu > Preferences > Import/Export"), then use a specialist bulk tagging program to handle the tags after exporting (...

If you're using a full size computer you need to plug into the "Line In" not the "Microphone In".
Microphone inputs are far too sensitive for the signal level that will be coming out of your amp.
If you plug headphones into the amp and listen to the MP3 player, do you hear noise?

If you selected a mono track, then I presume that you would expect the "Stereo to mono" option to be greyed out? For Audacity to do that, it needs to look at the selected track and see if there is one or more stereo track(s) selected. If there are no tracks selected, then Audacity will see...

Are you talking about the second track being a little bit shorter than the first track? (other than that they look the same to me).

If you have each song/part of song on it's own track you can use the volume slider on the left side of the track to adjust the volume level.
