For use with an iPhone I'd suggest that you just export from Audacity as a WAV file, then use iTunes to convert the WAV to M4A and synchronise you iPhone. Apple has a few quirks of its own about AAC files, so I think iTunes would be the best program for doing the encoding. Here's some information on...

Audacity 1.2.x does not have latency adjustment. That's one of the features that was introduced in the 1.3 series.
I'd recommend that you install Audacity 1.3.13 (the latest 1.3.x version). If you still have trouble with it, let us know and we'll try to get you up and running.

A single stereo track will usually fit with ease on the default layout. Are you using a tiny screen?
You can set Audacity to automatically "fit to screen" in Preferences:

The setting in my last post are a suggested starting point for Compressor first followed by Soft Clipping Limiter.
You will need to experiment to find the best settings.
