You can also use MP3 audio files with Picasa Movie Maker. ( http://picasa.google.com/support/bin/an ... swer=19496 )

What is the make/model of the cassette player?
Do you normally have the cassette player plugged into an amplifier? If so, does that have a variable output that you could use?

"Change Pitch" is not a Nyquist effect. I think it's written in C+.

When you mark the track with labels and then "Export Multiple" it will create multiple files, one for each marker. Is that happening? Is that not what you want?

Are you absolutely certain that Audacity is recording from "Stereo Mix" and not from another source (such as an internal microphone)?

Running short of RAM will have an enormous affect on processing time.
Use the Task Manager to check that there is free RAM (real memory, not virtual memory). If the computer runs short of RAM it will start swapping data between RAM and the hard drive and the processing will take an age to complete.
