There is a circle with a line through it if I put the cursor over any of the tracks when the envelope is applied.

Perhaps playback is paused (or playing). It needs to be stopped. Try clicking the "Stop" button.

Which version of Audacity do you have? (look in "Help menu > About Audacity").

I expect there will be a mobile App "Audacity" some time, but it will not be based on the current Audacity code base, it will have to be written from scratch.

As a test, does Windows Sound Recorder work?

If you want to record into a stereo track, you must record 2 channels stereo.
If you are recoding in mono, you can only record into a mono track.
