"Preferences" is not available during Record, Playback or Pause.
Audacity 1.2.x has known problems on Vista. You should upgrade to Audacity 1.3.13.

It looks like you have bit overflow in your waveform generation.
8-bit data should be in the range − 128 to 127 if signed, or 0 to 255 if unsigned.
Bit overflow occurs if the generated data exceeds the range of values that is supported by the number format.
