There's a plug-in called "Chris's dynamic compressor" that was designed specifically with this type of application in mind. You can get it here: http://wiki.audacityteam.org/wiki/Compressor
I'd suggest trying it first with the default settings and then work from there.

The Samson CO1U USB microphone is a mono device. It only produces one (mono) channel of sound. Set Audacity to record "1 channel (mono)" in "Edit menu > Preferences > Devices" and you will get a mono recording that plays through both left and right speakers/headphones.

Usually Chris's Dynamic Compressor would be applied to the entire track. I guess that you have some specific reason for not doing that.
