OK, don't change anything else, but (I guess the 2 RCA male plugs are connected to the turntable?) Swap around the two RCA plugs so that the left goes into the right and vice verse. Then make a test recording. What happens?

It's probably recorded too loud, or you are playing it through speakers/headphones that cannot handle that amount of bass. How tall is the waveform on the track compared to the track height? I very much doubt that the cause of the problem is due to the updated version of Audacity, even though there is some circumstantial evidence suggesting that it is.
