For recording jam sessions / rehearsals, I use a Zoom H2. Just put it as far away from the drums as possible and press the red button.

If the Linux systems have PulseAudio installed, then you need to be aware that PulseAudio will take exclusive control of the sound card. If there are no other programs accessing the sound card, then probably the easiest way to record with Audacity is to set Audacity to access the sound card directly...
