Try setting it to "2 channel 16-bit 44.1 kHz".

There have been some reports that if you start Audacity as root user ("once only" - applications should not normally be run as root), and then click the recording meter (where it says "Click to Start Monitoring"), then you should be prompted to give Audacity access to the microph...

As far as I can tell, everything on your system, including Audacity, is OK, but for some reason macOS appears to have blacklisted Audacity from accessing the sound system. If I recall correctly, there's a way to force the computer to ask for microphone permissions, though I don't recall the exact co...

You could try a full reset of Audacity. This resets parts that other resets don't reach. Exit Audacity. Go to the folder ~/Library/Application Support/audacity/ (where "~/" means your home folder) and delete the three files: audacity.cfg pluginregistry.cfg pluginsettings.cfg On next launch...
