Open the Metadata Editor (File menu) before you Export and enter all of the information that is common to all tracks.

Yes it is, but I would use Audacity 1.3.13 and not Audacity 1.2.x. Which version of Audacity do you have? (look in the Help menu > About Audacity.)

I suspect that some other program has associated itself with the .AU files and changed the icons.
Other than the icon change have you noticed any other changes?

I don't think you can do that as a batch process in Audacity because when you import a multi-channel sound file it will create multiple mono tracks, so until you manually set each track to where you want it in the stereo field (for example with the track Pan sliders) you have a multi-track mono show...
