Audacity 1.2.5 is really old. It was designed to run on machines of a bygone era.
The recommended version of Audacity for OS X 10.6/10.7 is Audacity 1.3.13 http://audacityteam.org/download/

Check that you have the latest version of Audacity (1.3.13)
You will find the full version number in "Help > About Audacity".
If you have an older version you can download 1.3.13 from here: http://audacityteam.org/download/
Just install 1.3.13 over the top of your current version.

I don't understand why it would just stop working like that. Yes that's strange. Something must have changed. Perhaps Windows has updated your sound card drivers. It may be worth checking if you can roll-back the sound card drivers to an earlier version (instructions here: http://pcsupport.about.co...

As it explains on the Audacity wiki, Vocal Removal only works if the vocals are panned in the centre of a stereo track.
