I've just looked in the Ubuntu Software Center and I see that the first option for Audacity is a Snapcraft (Audacity 2.4.2).
At the bottom of the list is the proper "deb" repository version (Audacity 2.3.3-1build1). Use this version.

Upgrade to Audacity 2.4.2 (https://www.audacityteam.org/download/mac/) and give Audacity permission to use the microphone.

If you use the Aggregate Device trick, I believe the Mac will smash both sounds together into one channel. It can do, or you can keep them on separate tracks. Try selecting the actual recording and playback devices (rather than "sound mapper") in the Device Toolbar.
