This may take some time, but if we go through a step at a time we have a good chance of success.

So what is the current situation with Audacity?
You said that you had trouble installing it (to be expected if you don't have Admin rights).
Are you able to run Audacity?

Glad you got it working. For future reference, when I'm working on an important project, I use "Save As" to make a new copy of the project (appending a version number to the project name) every 30 minutes or so. This eats up loads of disk space, but guarantees that in the worst case scenar...

If you're comfortable using the command line you could use SoX . I don't use Macs, so I'm not the best person to ask, but I think iTunes can encode MP3s.
