Mac computers do not have an option for recording from "Stereo Mix" so you are probably recording from the microphone (which will explain the poor sound quality).

If you use the "Recommended Download: Windows 2000/XP/Vista/7: Audacity 1.3.14 installer (.exe file, 18.4 MB)" then the manual should be installed automatically by simply installing with the default settings.
