Audacity does not provide any means for batch converting projects. The idea is that you work on the Audacity Project, then finish by Exporting the audio file. MP3 is a lossy compression format. In order to achieve a small file size, some of the data is thrown away and the remaining data is squashed together as tightly as possible. Audacity Projects have a complex structure. Recovering a deleted project may not be possible. That definitely sounds like "Noise Suppression" or "Echo Cancellation" or some similar effect.
Sometimes there is a second Sound Card Control Panel (it may be called "Realtek" or "SigmaTel"). If there is, then there may be more settings in there.

Audacity does not yet support playing MIDI files. The MIDI "Note Track" is just a visual guide.

Could you try and make your images a bit smaller - it's difficult to view this topic with such big images in it.
Try playing one track at a time (use the "Solo" button) so that you can hear what is in each track.

Where possible, could you trim your images down to just show the relevant detail - it's difficult to read your messages when the screen shots are so big.
