Good question, and an important one. In order to be able to do all of the fancy editing stuff, Audacity uses a special format for working on projects. Check the Recording Input setting in the Device Toolbar.
Check in the Windows Mixer recording settings that the input that you wish to use is enabled, not muted and the recording level is turned up.

I use much lower spec. hardware than that, so that's not the problem. My best guess would be the sound card drivers. "Sound Blaster X-Fi" have a terrible reputation for drivers - not for gaming, apparently they're great for that, but frequently buggy for recording. Check on the Creative we...

Rename both the file and the folder to what they originally were.

You're getting "drop-outs" (sometimes called an "xrun") Basically it is a discontinuity in the waveform that occurs if some part of the system is unable to keep up with the flow of data. Each time it happens you will hear a click. Here is a zoomed-in close-up of one of the clicks...

Audacity is probably the best tool for the job and is easier to use than many of the other options. The task will probably seem hard at first because it's all new. Probably the best approach would be to spend a bit of time with the program doing nothing important and with no pressure. Try following ...
