Please read the "Information about this forum" (in red) above and provide the requested information. When I add the second track I askfor a mono track but end up with two mono tracks recording and I don't know why. I'm not sure what you mean. How are you "adding the second track"...

The default Audacity settings will work well.
Set the number of recording channels to 1 (mono) in the Device Toolbar http://manual.audacityteam.org/man/Device_Toolbar

Sample Rate 44100 Hz
