Unfortunately Audacity cannot do that as a "batch" operation, though I think there are ways to accomplish the task a lot more quickly than doing one at a time. I need to change the "Project rate" to "8000" "Split Track to Mono" and "Export to .wav", ...

MP3Gain is a standalone program. It has nothing to do with Audacity.

Did the problem exist with the original recording?

Try adjusting the guitar gain switch (marked "5" in the manual page 10).
Ensure that the playback level from the computer is not too loud (you can probably turn that down in Audacity - if not, use the computer system sound controls.)
