Audacity has not been designed for background recording. It does not support global hot keys.

Press Ctrl+F to "Zoom to Fit". This will allow you to see then entire recording at once. Is that what you want?

Unfortunately (mult (real-random -0.1 0.1) s-in)) is not evaluated each time it is triggered. It is evaluated once at the start only.
