Try disabling VST support in Audacity and see if Audacity launches correctly (and reasonably quickly) without errors.
VST support can be disabled in "Edit > Preferences > Effects".

How are you recording? How is the cassette player connected to the computer?
Which version of Windows?
Do you have plenty of free disk space (how much, and what is the total drive size?)
What exactly do you mean by "the audio display suddenly locks up"?

Ensure that the headphones are connected and working before you launch Audacity, then check that you have selected the Logitech USB headset as the playback in the Device Toolbar: http://manual.audacityteam.org/man/Device_Toolbar

Evidently it was a stereo recording since I got that message. No, if it is a stereo recording the message will say: "Your tracks will be mixed down to two stereo channels in the exported file." I just thought that might be an easy answer. It probably is. Before you start recording next ti...

As far as I'm aware. the only way that Audacity can export a mono file is if all enabled (not muted) audio tracks in the project are mono.
Are you absolutely sure that the recording was stereo? (Stereo tracks show two channels, as in this picture: http://manual.audacityteam.org/o/#reference )
