I wouldn't really recommend running Audacity in a virtual machine - much better to run the native version on real hardware, but regarding your question, upgrade to Audacity 2.0.2 and also check the location of the Audacity Temp folder is valid and writeable (Edit > Preferences > Directories)

Turn off "Software Playthrough" in the Transport menu.
It is not possible to listen a Logitec USB microphone while recording without an unacceptable delay. To b able to do that with a USB mic, the mic must have a headphone socket built in, but the Logitec mic does not have one.

Try selecting "Rescan Audio Devices" in the Transport menu, then select the USB device as the recording input in the Device Toolbar.

The videos are probably using an old version of Audacity.
To export:
"File menu > Export" and select the required file format there.

You can check that one minute really has been chopped off by importing the file back into Audacity.
