Go into the Windows Sound Control Panel and turn down the recording level for the USB device really low.

LPs are usually stereo, so I'd leave them as stereo recordings.

How can you hear them in iTunes but not on your computer?

Yes that is clipped at the bottom, so you do have a problem.
Please say more about the equipment - what sort of pre-amp, what input on the computer, what sort of turntable, what sort of computer.... too much detail is better than not enough.

Could you post a short sample? Just 3 or 4 seconds in WAV format will be fine.

(There's additionally Steve's Append Import plug-in available which loads *.wav files according to a list into one track) Either according to a list of file names, or all supported file types in a specified directory in alpha-numeric character order. The USB connection on your keyboard is probably not an audio connection. It is more likely to be a MIDI connection.
