By default the audio waveform is updated during recording and playback. You can turn that off in preferences.
Ctrl+P to open preferences, then go to the "Tracks" section, then deselect "Update display while playing".

Not all CD drives support writing CD Text. We have three laptops in the department at work - The CD drive in one of them supports writing CD Text but the other two don't. Most good CD writing programs (such as CDBurnerXP support CD Text, but the option is greyed out if the drive does not support it....

For advanced graphing capabilities you can export the spectrum data from Plot Spectrum and import it into a spreadsheet, MatLab, specialist graph drawing application or similar.
