Generally it will probably use around 40 to 100 MB of RAM (very little) but some processes may take more. You can use "Edit > Remove Audio or Labels > Delete".
If that option is greyed out, then either you don't have a selection, or you have "paused" playback rather than "stopped" playback. Audacity must be in "stop" mode.

If the sound is too fast during the recording, then the problem has nothing to do with settings on the computer.
