If you want to record three channels at the same time you need to be using a "multi-channel sound card" that is capable of recording 3 channels at the same time. Most sound cards can only record one (mono) or two (stereo) channels.

There are various ways to do it.
Depending on the type of music you may be able to use "Sound Finder" to mark the tracks with region labels. then use Export Multiple to export the marked sections.

If you added this PPA repository (https://launchpad.net/~audacity-team/+archive/daily) to your sources list, comment it out.
