I'm not sure what you are doing, but the easy way to copy a track (mono or stereo) to a new track, is to use the "duplicate" command (shortcut Ctrl+D)
1) Double click on the track to select it.
2) Press Ctrl+D

You would get better quality recording as uncompressed audio and then converting directly to MP3 format than going through an intermediate conversion of MP4 format.
