What do you see if you open the disk in your file browser?
Depending on how talented your file browser is, you may be able to just drag and drop them from the CD to a folder on your hard drive.

No that feature cannot be turned off, though as you are aware there are many ways to avoid it.

In addition to the "enhancements" that koz mentioned, some sound cards also have their own control panel with additional effects "to enhance your listening pleasure".
