"Pause / Unpause" is often the easiest (shortcut: "P" key).

You can also use "Transport menu > Append Record" (shift+R) to continue after stopping.

Connect the outputs of the USB interface to the "2-Track Inputs".
The "2-TR TO CTRL ROOM/PHONES" button should be down.
