There are pros and cons to all microphones. The Shure SM58 is a good microphone, and extremely robust. It's a very old design, but is still very widely used, particularly for live stage use. The kit you have should be able to do the job properly when set up correctly.
Do you have Audacity set to record "2 channels (stereo)" in the device toolbar?
Do you have Windows set to record from that device in stereo in the Windows Sound Control Panel?
