I think you may mean "AAC" (http://en.wikipedia.org/wiki/Advanced_Audio_Coding)
It is listed as:
M4A (AAC) Files (FFmpeg)

What are you recording? Are you recording vocals over a backing track? Are you using a USB mic? What settings do you have in the device toolbar?

Note that to create an MP3 file you must "export" from Audacity. The "save" command only produces Audacity projects, not audio files.
