There is also a note in the Zoom manual that the USB interface works differently when 48000 Hz is selected, but it is vague as to what the differences are.

I don't see how you could possibly do surround in Audacity as there is no way to listen to your mix... What if you import a multi-channel (surround sound) file for editing?
