There is also a Leveler effect. Less said about that the better in my opinion. The Leveler effect does nasty things to the sound quality. I'm guessing that you are using a laptop computer and Audacity is using the built-in mic as the input.
In the device toolbar, set the recording input to the USB option.

To continue recording after recording has been stopped, use "Append Record" (Shift+R). It's in the "Transport" menu.
