A lot of people used to leave Dolby turned off during playback because they liked the "brighter" sound (treble boost). I didn't... I used it correctly but it's not "terrible" without it. I found it useful to turn Dolby off during playback of some old cassettes, because cassettes...

Audacity uses "32-bit float PCM" format internally. This format has benefits of not only great sound quality, but also the ability to support audio above 0dB.
Most WAV files are "16 or 24 bit integer PCM", which cannot go over 0dB (anything over 0 dB is simply clipped off).

A file ending in ".ny" is a "Nyquist plug-in". They need to be installed, and then enabled in Audacity.

Yes, it will do.
The spectrogram is calculated only when the data exists on disk. The data is written in (approx) 6 second chunks.
