The scratch test is certainly working
but the huge signal level shows that your recording level is very high.
How close are you to the microphone (lips to mic distance), and how is the "focus control" set?

Regarding recording level, you could probably be a fraction closer to the mic and project a little. Avoid "talking to the mic" - imagine there's someone across the other side of the table and talk to them. That will raise your voice level without turning it into "announcement mode&quo...

From listening to the first two samples, the problem is not actually "hum", but just "noise", particularly low frequency noise. You can make quite a drastic improvement to that quite easily by filtering out the lowest frequencies. The attached file has the settings for an Eq curv...

8-bit unsigned seems to work pretty well.
Here's a bit of "channel moshing"
The inverted part of the image was by "reversing" part of the waveform.
The colours were enhanced in Gimp for the final image.

Selecting the "planar" option when exporting from Gimp gives you all the "red" data first, then the "green", then the "blue". The "normal" (RGB) option gives you an audio file containing RGB values for each pixel in order, starting from the top left ...

The video tutorial said U-law, arkmabat said A-law, maybe that's the source of their problem, (evidently it's not Audacity's fault).
