To save the changes when running a Chain, you have to add an Export step at the end of the chain (as you have discovered).
I rarely use metadata myself, but some users find it easiest to handle metadata tags using a specialist tag editor (such as Mp3Tag).

I've installed it and it is indeed convenient! :D If this functionality were to be incorporated into an existing effect, perhaps adding a single checkbox to the Change Pitch effect (e.g., "Maintain tempo", checked by default) would be preferable to (and possibly more intuitive than) addin...
