Unfortunately that does not work so well with the current version of Noise Reduction as the old version, so it's not likely to help very much.

You've not given us much to go on, but my guess is that whatever it is that you are recording is probably too quiet, so that when it is normalized it is amplified a lot, and so causing the background hiss to become excessively loud. Overdub recording is a big subject, but the general principles are the same for vocal as for guitar as for sax as for any other instrument. Is there a way that I can duplicate this workflow with Audacity? If not now, how difficult would it be to implement in a future version. Only one Audacity instance can record (or play) at one time.
