The most common cause for Audacity crashing is if there are problems with the sound card drivers. Windows 10 is particularly fussy about having the correct drivers. Unfortunately a problem was discovered in the beta version so it has been temporarily removed. However, a new release candidate is due to be announced very soon.

Noise gates can be useful for this type of thing in live situations, but I'd generally avoid using a gate for voice recording.
