In Audacity you can include the time/date that a recorded track was created into the name of the track. See:

I'm not familiar with Samplitude.
In Audacity you can move audio clips around with the Time Shift tool.

Is it a USB turntable?
If so, ensure that you connect it before launching Audacity, then select the USB option as the recording device in the device toolbar

The really bad side effect was that you could accidentally destroy an in-progress recording that's running in a background window.
